Vegan Tomato Soup
This vegan tomato soup tastes as if you cooked it for hours and it’s super simple to make.
Ingredients
- 1/4 cup olive oil
- 1 cup onion, chopped
- 2 cloves of garlic, smashed
- 2 (28 oz) can whole peeled San Marzano tomatoes
- 1 tablespoon fresh thyme
- 2 cups vegetable stock
- Sugar, salt and pepper to taste
Instructions
- Add olive oil, onion and garlic to a pot and cook over medium heat until the onions are soft but not browned.
- Add tomatoes, thyme and vegetable stock.
- Simmer for 20 minutes.
- Season with sugar, salt and pepper according to your taste.
- Blend with a hand mixer or in two batches in a stand blender.
