Mini Eggnog Coffee Cake Loaves

I love using my mini loaf pan for making treats to take to neighbors and friends. This recipe is great because it fills a standard mini loaf pan (8 loaves) perfectly.

Ingredients

For Cakes:

  • 1 cup eggnog
  • ½ cup butter, melted
  • 2 eggs
  • 2 teaspoon vanilla
  • 1 ½ cups flour
  • 1 cup sugar
  • ½ teaspoon salt
  • 1 ½ teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg

For Glaze:

  • ¼ cup eggnog
  • 1 teaspoon vanilla
  • ¾ cup powdered sugar
  • ⅛ teaspoon nutmeg

Instructions

  1. Preheat your oven to 350 degrees F and grease your mini loaf pan.
  2. Gently whisk the eggnog, butter, eggs and vanilla together in a large bowl.
  3. Add the flour, sugar, salt, baking powder, cinnamon and nutmeg and gently stir – just until combined.
  4. Pour into loaf pans, filling each one about ¾ full.
  5. Bake for 30 minutes or until a toothpick comes out clean.
  6. While the cakes are baking, combine the glaze ingredients and stir until combined.
  7. Removes loaves from the oven and cool on a wire rack.
  8. Drizzle with glaze and enjoy.

Notes

Store in an airtight container for one week. I like to serve them with coffee or eggnog lattes.
