Sushi at Ignite – Ritz Carlton Dove Mountain

I was worried when I moved to Tucson that it would be hard to find good sushi. I found out that Ignite at the Ritz Carlton Dove Mountain serves sushi on Fridays and Saturdays (between 5-9PM). The sushi was delicious. I could tell the fish was incredibly fresh and the maki rolls were well seasoned.

Ignite is located just beyond the entrance of the Ritz Carlton. It has both indoor and outdoor seating. I  recommend getting there on the earlier side and grabbing a table outside. The views are beautiful, especially if you happen to catch the sunset.

Shrimp Tempura Roll: This roll is shrimp tempura, avocado, cucumber, tobiko, and eel sauce. If you like fried shrimp, I highly recommend this maki roll. The tempura is perfectly fried and adds a nice crunchy texture to the roll. If you don’t like tobiko, you can ask for it to be removed – at times, it can have a fishy taste.

Ignite Tuna Roll: This roll is ahi tuna and cucumber which is topped with hamachi (yellowtail), jalapeno, and green onion. This roll epitomized how fresh the fish is at Ignite. It’s the perfect combination of  tuna and hamachi with a hint of heat from the sliced jalapeno.

Sonoran Spicy Tuna: This roll is ahi tuna, cucumber, tempura flakes, and sriracha sauce. I think you can always judge the quality of one’s sushi by ordering a spicy tuna roll. At Ignite, you’ll be treated to a roll that balances the delicate flavor of tuna with the spiciness of sriracha.

Trio of Pickled Vegetables: This dish came out complicates of the kitchen – seaweed salad, pickled cucumbers and red onions, and picked diakon. The seaweed salad is probably the best one I’ve ever had. Normally, this salad can be a little fishy and strong in flavor. The one at Ignite is a nice blend of sweetness and saltiness.

Uni Nigiri: Yummy! If you’ve never tried uni, don’t be afraid to order it at Ignite (if it’s available). I like to describe uni as the butter of the sea. It’s creamy texture and slight brininess are divine.
