Banana Chocolate Chip Muffins

These muffins have a consistency that is very similar to banana bread. The chocolate chips and walnuts are both optional.

Ingredients

  • 3 ripe bananas
  • 1 cup sugar
  • ½ cup vegetable oil
  • 1 egg
  • 2 cups flour
  • 1 teaspoon baking soda
  • ½ teaspoon sea salt
  • ½ cup chocolate chips
  • ¼ cup walnuts

Instructions

  1. Preheat oven to 350 degrees F.
  2. Line a muffin tin with paper cups or spray with cooking oil.
  3. Mash bananas in a bowl.
  4. Mix in sugar, vegetable oil, and egg.
  5. Gently stir in flour, baking soda and salt.
  6. Gently stir in chocolate chips and walnuts.
  7. Fill muffin cups about ⅔ full.
  8. Bake for approximately 30 minutes or until the tops are golden brown and a toothpick comes out clean.

Notes

We are working on a healthier version (with less sugar and oil) but this is our tried and tested recipe.
