Vegan Tomato Soup

This vegan tomato soup tastes as if you cooked it for hours and it’s super simple to make.

Ingredients

  • 1/4 cup olive oil
  • 1 cup onion, chopped
  • 2 cloves of garlic, smashed
  • 2 (28 oz) can whole peeled San Marzano tomatoes
  • 1 tablespoon fresh thyme
  • 2 cups vegetable stock
  • Sugar, salt and pepper to taste

Instructions

  1. Add olive oil, onion and garlic to a pot and cook over medium heat until the onions are soft but not browned.
  2. Add tomatoes, thyme and vegetable stock.
  3. Simmer for 20 minutes.
  4. Season with sugar, salt and pepper according to your taste.
  5. Blend with a hand mixer or in two batches in a stand blender.
