Make and Freeze Bacon Breakfast Burritos
It feels like everybody’s in a rush these days. I know when my week gets busy, I forget to eat breakfast. One of my favorite things to do is make a batch of breakfast burritos over the weekend and freeze them. That way, when your week gets a little crazy, you’ve got the perfect solution that quick and easy.
Bacon Breakfast Burritos
Super simple bacon breakfast burritos. You can make a large batch and freeze them so they are fast and easy in the morning.
Ingredients
- 1 package bacon, cooked and sliced into small pieces
- 1 tablespoon olive oil
- 1 package of frozen hash browns
- 1 cup onion, chopped
- 1 cup bell peppers, chopped
- 8 eggs
- 12 medium sized flour tortillas
- 1 cup of shredded cheese
- 2 tablespoons Sriracha (optional)
Instructions
- In a large sauté pan, add the olive oil and cook the hash browns according to the package instructions.
- Scoop the browned hash browns into a bowl.
- Add the onion and bell pepper to the sauté pan and cook until tender.
- Transfer to the bowl with the hash brown.
- Add the eggs to the sauté pan and scramble until just cook (still a little runny).
- Add to the bowl and season the hash browns, onions, peppers and eggs with salt and pepper.
- Take tortillas and fill them with bacon, hash brown mixture, shredding cheese and sprinkle with sriracha (optional).
- Roll into wax paper and freeze immediately or store in fridge for up to one week.
Notes
- We like the microwave the burritos in a slightly wet paper towel for 2 minutes so that the tortilla doesn’t dry out.
