Herb and Cheese Baked Salmon
This is an easy and healthy weeknight dinner:
Ingredients
- 2 (5-ounce) salmon filets
- 2 tablespoons olive oil, divided
- 2 tablespoons parmesan, grated
- 1 teaspoon thyme, de-stemmed
- 1 teaspoon rosemary, chopped
- 1/2 teaspoon lemon zest
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Rub the salmon filets with about 1 teaspoon of olive oil each. In a small bowl combine the Parmesan, thyme, rosemary, lemon zest, salt and pepper. Sprinkle the cheese mixture on the salmon filets and bake at 400 degrees for 20 minutes or until desired doneness.
