Mini Eggnog Coffee Cakes
I love using my mini loaf pan for making treats to take to neighbors and friends. This recipe is great because it fills a standard mini loaf pan (8 loaves) perfectly.

Ingredients
For Cakes:
- 1 cup eggnog
- ½ cup butter, melted
- 2 eggs
- 2 teaspoon vanilla
- 1 ½ cups flour
- 1 cup sugar
- ½ teaspoon salt
- 1 ½ teaspoons baking powder
- 1 teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
For Glaze:
- ¼ cup eggnog
- 1 teaspoon vanilla
- ¾ cup powdered sugar
- ⅛ teaspoon nutmeg
Instructions
- Preheat your oven to 350 degrees F and grease your mini loaf pan.
- Gently whisk the eggnog, butter, eggs and vanilla together in a large bowl.
- Add the flour, sugar, salt, baking powder, cinnamon and nutmeg and gently stir – just until combined.
- Pour into loaf pans, filling each one about ¾ full.
- Bake for 30 minutes or until a toothpick comes out clean.
- While the cakes are baking, combine the glaze ingredients and stir until combined.
- Removes loaves from the oven and cool on a wire rack.
- Drizzle with glaze and enjoy.
Notes
Store in an airtight container for one week. I like to serve them with coffee or eggnog lattes.
