Make and Freeze Bacon Breakfast Burritos 

It feels like everybody’s in a rush these days. I know when my week gets busy, I forget to eat breakfast. One of my favorite things to do is make a batch of breakfast burritos over the weekend and freeze them. That way, when your week gets a little crazy, you’ve got the perfect solution that quick and easy.

Bacon Breakfast Burritos 

Super simple bacon breakfast burritos. You can make a large batch and freeze them so they are fast and easy in the morning.

Ingredients

  • 1 package bacon, cooked and sliced into small pieces
  • 1 tablespoon olive oil
  • 1 package of frozen hash browns
  • 1 cup onion, chopped
  • 1 cup bell peppers, chopped
  • 8 eggs
  • 12 medium sized flour tortillas
  • 1 cup of shredded cheese
  • 2 tablespoons Sriracha (optional)

Instructions

  1. In a large sauté pan, add the olive oil and cook the hash browns according to the package instructions.
  2. Scoop the browned hash browns into a bowl.
  3. Add the onion and bell pepper to the sauté pan and cook until tender.
  4. Transfer to the bowl with the hash brown.
  5. Add the eggs to the sauté pan and scramble until just cook (still a little runny).
  6. Add to the bowl and season the hash browns, onions, peppers and eggs with salt and pepper.
  7. Take tortillas and fill them with bacon, hash brown mixture, shredding cheese and sprinkle with sriracha (optional).
  8. Roll into wax paper and freeze immediately or store in fridge for up to one week.

Notes

  • We like the microwave the burritos in a slightly wet paper towel for 2 minutes so that the tortilla doesn’t dry out.
