Hummus Tehina

Hummus

Smooth and creamy hummus made from dried chickpeas

Ingredients

Scale
  • 1 cup dried chickpeas
  • 4 cups water
  • 1 teaspoon baking soda
  • 1/3 cup lemon juice
  • 1 teaspoon salt
  • 2/3 cup tahina (sesame paste)
  • 1/2 teaspoon cumin

Instructions

  1.  Add the dried chickpeas, water and 1 teaspoon of baking soda to a bowl, cover with plastic wrap and soak overnight.
  2.  Strain and rinse the chickpeas and add to a pot. Cover with water and boil for 1 hour.
  3.  While waiting for the chickpeas. Blend together the tahina, lemon juice, salt and cumin. Let stand for 10 minutes.
  4.  Strain the cooked chickpeas and blend them into the mixture.  Season with salt to taste.
  5.  Serve with olive oil, chopped parsley and paprika as desired.

Notes

Tip #1: You can add another teaspoon of the baking soda to the chickpeas when you boil them to get an extra fluffy hummus.

Tip #2: You can add a little ice water to the tahina mixture while you are blending it and you can strain it if you’d like to make your hummus extra smooth.
