Roasted Sweet Potatoes with Jalapeno and Honey

You are going to wonder why you haven’t heard of this dish before after you try it and see how easy and delicious it is. Feel free to use olive oil in place of the butter if you want to keep the dish vegan. We like the roundness that the butter gives the recipe and since it is only one tablespoon we still count this dish as heart healthy. Sweet potatoes are a good source of potassium, manganese, dietary fiber, niacin, vitamins (A, B1, B2 and B6) and phosphorus.

Ingredients

  • 2 large sweet potatoes, chopped into rough ½ inch pieces
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 2 tablespoons honey
  • 1 tablespoon jalapeno, finely minced
  • 1 teaspoon garlic, finely minced
  • 1 tablespoon butter

Instructions

  1. Toss the sweet potatoes in the olive oil, salt and pepper.
  2. Bake in a 400 degree oven until tender and slightly brown (about 15 minutes).
  3. Combine the honey, jalapeno, garlic and butter and microwave for 30 seconds on high heat.
  4. Toss the baked sweet potatoes with the honey mixture and enjoy while warm.

Notes

  • If you want a little more spice, you can add some cayenne pepper
